Gyuto
牛刀 · the chef's all-rounder
The 8-inch all-rounder. A wide blade keeps your knuckles clear of the board, and the curved belly rocks through seamless, precise mincing.
VG-10 hammered damascus · Ebony & buffalo horn · Australia
Scroll, and watch the light move across the steel.
Each dimple releases food from the blade and catches the light like still water.
A hard cutting core clad in folded layers, etched with 改善 at the heel.
Polished ebony with a single brass ring. Quiet, balanced, made to be held for hours.
Every batch is finished a little better than the last. That is the promise in our name.
A great knife is never finished. It is improved — by the maker at the stone, and by the cook at the board, year after year.
Every Kaizen blade pairs a VG-10 damascus body, prized for its sharpness and corrosion resistance, with a hand-hammered tsuchime finish. The dimples are not decoration: they release food from the blade as you cut, and they catch the light the way still water does.
Each knife is finished with an octagonal ebony wood handle, a buffalo horn ferrule and a single ring of brass — quiet, balanced, and made to be held for hours.
